5 ways to super charge your ultimate breakfast buddies

As I am a very hungry person and also don't want that only my bveloved makes the breakfast I wanted to find some good recipes to spice up that fry up you make yourself in the morning using bacon and eggs. Longboarder, blogger and all around cool Irishman Rory Kelly who runs www.rorykellycooks.com came to the rescue with these five excellent recipes to switch up my routine in the morning and get some brownie points with the MRs on the weekend.

Is there anything more wonderful sounding in this world than Bacon and Eggs for breakfast? If there is I really don’t wanna know!

 Eggs and Bacon are an institution, they are the titans of the breakfast table and for me these guys are the solid foundations of the ultimate meal, the first and most important meal of the day….. breakfast.

There is a wonderful psychology at play with breakfast – you’ve been asleep for the better part of 8-10 hours, the longest period of time you have gone without food. In affect you are actually starving yourself hence the word ‘Break - Fast’, so it’s a joyous occasion, its huge endorphin kicker…hot delicious food!! Your breakfast has got to put a smile on your face…it must inspire you to crush your day…at breakfast you are at your lowest ebb so do something about it, get that killer Bacon and Eggs into you!!!!

But, and I hate to say this….Eggs and Bacon can get real dull real quick – the same thing again and again and again kills the beauty of it – so what to do? How do you keep the excitement, how do you keep it interesting after you’re bored with frying, scrambling, poaching and grilling 10 times in a row??

Well – here a few ideas to supercharge these breakfast bad-asses.

1.Stuffed bacon and Mushroom Omelette

Omelettes can be tricky to master, but once you get the hang of them they’re a great way to level up your eggs – if you treat them like a

What you need

2 full free range eggs beaten

4 sides of quality Hickory bacon roughly chopped

Handful of button mushrooms sliced

2 tps butter

How you do it

Use an 8inch frying pan, melt one tps of the butter and sling in the bacon and fry till well cooked and crispy, remove and set aside.

Add the mushrooms to the pan season well and fry until just cooked, remove from the pan and add to the bacon.

Add the second tps of butter to the pan and bring to a ‘spitting’ heat then add the beaten eggs and stir vigorously with a fork shaking the pan as you go – this gets a lot of air into the eggs making the fluffy and light.

When the omelette is about ½ cooked (still a little runny) spoon the mushrooms and bacon onto the centre in line the flip the egg over on itself covering the mushrooms and bacon.

 Serve straight away with rye toast or just as it is

2. Baked Avocado, Eggs & Bacon

Avocado is a ‘super food’ – I have no idea what that means…for me ALL natural, unprocessed foods are super! This is a great little breakfast dish that needs next to no prep.

What you need

½ an avocado stoned

1 egg yolk

2 strips bacon

1 tps butter

How you do it

Set the avocado on a baking tray, drop the egg into the avocado cavity , lay the bacon on top and sling into a hot oven for 10-15 minutes

 

3.Spiced rice Omelette

This one is a leftover dish, typically using fried rice with spices but in truth you can really use whatever you want here!  The kicker to this one is spice – chilli first thing in the morning will turbo charge your system.

 What you need

Spiced rice left overs

2 beaten eggs

1 tps butter

How you do it

Melt the butter to spitting heat in an 8 inch frying pan, pour in the eggs and allow to cook ½ way through.

Next spoon on the rice then flip the egg over on itself and continue to cook out

Serve with small piece of Naan bread toasted

4. Egg n Bacon cups with cream

So this one is for the show off in you – its basically baked eggs n bacon enriched with cream but it looks the bomb!

What you need

Streaky bacon

Free range eggs

A little cream

Cayenne Pepper

How you do it

You’ll need a muffin tray – butter the wells then take the streaky bacon and curl them into the wells to form a raw ‘cup’.

Crack the eggs right into the bacon well, add a little cream then season with salt and pepper and a few pinches of cayenne.

Bake in a hot oven for 15 minutes

Serve with hot buttered toast

5 'The Bomb’

This is the one I grew up on – there’s a little bit more work involved here buts its completely worth it – it sounds a bit weird and looks a bit messy but stick with me here – you’ll love it

What you need

3 free range eggs

3 strips bacon

Fresh parsley

Cracked black pepper

Salt flakes

1 tps butter

How you do it

Hard boil the eggs, peel and add to a warm bowl

As the eggs are boiling grill the bacon then roughly chop

Add the bacon to the eggs in the bowl

Finely chop the parsley then add this to the bowl

Next roughly chop the egg and bacon mix together in the bowl using a fork

Season with the salt and pepper then serve in a big mug with the butter on top

So the next time you are standing in a cold 5am kitchen needing motivation to hit the day, hit the gym, hit the track, hit the road – think eggs and bacon but think what more they can be with just a few simple additions and tweaks.

Wakey wakey…I want that eggs and bacy!!
