Barbell rows are not necessary for the gym. You can replace them with dumbbell rows. Still, many elite lifters report that a higher deadlift can be established by rowing more.

Stronglifts is not really the ideal program to team up with BJJ. Leave the weight room to the side as a BJJ beginner and focus on technique and functional strength first. If you are competing and feel you lose your fight on being overpowered by your opponents have a look into Wendler 531 and the Juggernaut method.

Build more tension off the floor and think of the deadlift as a hinge. These are the best tips to make your deadlift feel less like a squat. Tension is key. Once you maximize it the deadlift will not feel like a squat anymore.

Curls are good for your biceps. Barbell curls are bad for your wrists. Therefore do curls, but with an EZ bar or dumbbell.

Barbell curls are not a compound exercise as they do not use multiple joints to execute the movement. It is a good isolated exercise for the biceps.

Barbell shrugs are effective for building bigger traps and a stronger grip. Whether this is effective for you depends on what your goals are.

Exercise is good for you. Barbell squats can be a risk when they are executed wrong or you do not know your limits. All around the benefits of being active outweigh the risk of injury.
Ketogains is a good choice when you can commit more time in the gym and also focus on your diet. Usually, this is too much for beginners. I recommend building better habits one step at a time. If you find easier to eat less start there. If you want to eat the same and get stronger go with Stronglifts 5x5.
